At birch, Ben uses his traditional training and non-traditional experiences to craft an accessible and environmentally engaging menu. The name birch comes from childhood nostalgia. Pennsylvania dutch-style birch beer was something Ben cherished growing up. Nostalgia is a major inspiration to the experience at birch, as is the regional environment. In the same way a birch tree starts from its roots, Ben takes a “from the roots up” approach to all aspects of the dining experience. The cuisine is creative and modern; expressing the best of New England's seasonal environment. In the short time birch has been open, Ben has been fortunate enough to be nominated for Best Chef: Northeast by the James Beard Foundation.
Heidi Sukle
With over 18 years of experience in the restaurant industry Heidi has an extensive knowledge of the inner workings of the front of house. Having worked in the top restaurants in Central Pennsylvania and Rhode Island she has spent many years focusing on service and its most important aspects. She has an impeccable eye for detail and organization, which she has used time and again to streamline the businesses for which she has worked. As general manager she will work in conjunction with the front and back of the house to make sure each guest has a seamless experience all the while keeping an eye on the bottom line.
